Gill's Gourmet Gallery
After three years working on this page Gill has decided to hand over the reins to Baslow WI members. A page is now open entitled 'Tried & Tested' it will contain recipes from WI members, including a little introduction to those members and our Editor's ideas regarding drinks to accompany the food! We look forward to watching the page grow, please submit recipes and photos.
Introducing Gill: At the July 2016 WI meeting Gill volunteered to send in recipes found, tried and tested by her with her own photographs as back up. The recipes will be posted on our Facebook page and stored on this web page for ease of reference. Our Editor adds her suggestions for wine pairing with the main course each month. We are all looking forward to watching the page grow and trying out the recipes. Check out Gill's index page to select recipes quickly.

December 2018 - As we are fast approaching Christmas Gill has picked a wonderful seasonal main course for us which isn't turkey! We all love hot tasty soup in winter time so we'll try this one using what we have and adding those very special mushrooms. The kids will love the fruit crisps who can resist having a go at this simple recipe? They are bound to impress your visitors! Happy Christmas everyone. 🤶🏻🎅
Note from Gill: 'The pheasant recipe is great if cooking for one or two I’d need a field full of pheasants to feed my crowd! Pheasant is also in season October to February so hopefully a good choice for the new year too, fruit crisps make a great nibble (few carbs) and a change from cake!!'

With this spicy chicken dish our editor suggests... White wine drinkers will find a well chilled Sauvignon Blanc or maybe a New World Chardonnay would go perfectly with this dish. Red wine lovers would enjoy a warming Pinotage or a Tempranillo. Sherry drinkers would love a cold fino that would have the backbone to stand up to this main course. |

Our editor doesn't often suggest drinking Rosé but served nice and cold with this curry she thinks it would be perfect. Or if you're not a fan or Rosé wine what about an off-dry Reisling from Germany, Austria or the New World? Beer - any Indian beers would go brilliantly Jaipur, Gateway or Tiger are just suggestions. At a BBQ we need to cater for all tastes, our editor Ann would recommend... Beer - Jaipur Ipa from Thornbridge Brewery . Red wine - Chianti the classic taste from Italy ideal to go with any BBQ meat. White wine - Ann's favourite Sauvignon Blanc from the South West of France or New Zealand, no oak flavours just crisp, dry fruit. |

Gill's goblet: Thai crab cakes. My choice would depend on whether I was having these as a snack on their own or as part of a Thai meal. If it was the former I’d go for a dry Riesling or a Loire Sauvignon Blanc. With the latter I’d look for a wine with slightly more sweetness such as a Tokay Pinot Gris or a spätlese Riesling. |

February 2017: Three fantastic, scrumptious recipes from Gill this month; a different take on the traditional Sunday roast is the main course, a smooth and delicious sweet to follow and a wicked cake as a special winter treat for you and the family!
With this spicy main course we would recommend Gill's goblet be filled with a smooth dark wine bursting with the ripe fruit flavours of cherry, plum and blackcurrants such as:

German Chocolate Cake Ingredients: Cake 4 ounces Belgium milk chocolate 1/2 cup of water 1 can coconut milk - 1/2 cup to save for frosting 1 tbsp white vinegar or cider vinegar 3/4 cup chopped unsalted butter 1 cup granulated sugar 1 cup dark brown sugar 4 large eggs separated 2 1/4 cups of self raising flour 1 tspn baking soda 1/2 tspn salt Filling 4 large eggs yolks 1 can condensed milk 3/4 cup unsalted butter 1/2 tspn salt 3 cups flaked coconut 1 cup chopped walnuts 2 tablespoons sour cream Frosting 6ozs milk chocolate drops 1/4 cup salted butter 1lbs icing sugar 1/2 cup coconut milk Method: Pre heat the oven to 180 degrees. Spray 3 9inch cake tins with oil and line the bottom with parchment. Melt Belgium chocolate in the water in the microwave for 1 min. Stir until liquid and leave until lukewarm. In a small bowl mix coconut milk and vinegar. Remembering to save a little milk for the frosting. Beat butter and sugars in a large mixing bowl until light and fluffy. Add egg yolks 1 at a time, beating. Add chocolate mixture keep beating until smooth. In a medium bowl sift flour, baking soda and salt together. Add this in thirds to the butter mixture with the coconut milk mixture. Beating until combined. Beat the egg whites to form a stiff peak meringue and fold gently a little at a time into the mixture. Divide the batter between the 3 tins, level gently and bake for 25 minutes. Remove from the oven when a tooth pick can be inserted into the cake and come out clean. Let cool in the tin for 10 mins. Remove from tins and cool completely on a wire rack. Filling Keep walnuts, sour cream and coconut on one side. Place all other ingredients in a saucepan and simmer stirring continuously until thickened and bubbling for 16 mins. Remove from heat and add coconut, sour cream and walnuts. Leave to go completely cool and spreadable. Frosting Microwave chocolate and butter for 30 seconds until almost melted and stir adding coconut milk and icing sugar to make a creamed frosting. Building Layer the cake with the filling and decorate with the frosting. Top with chocolate and coconut. Cover and refrigerate for up to 2 days. |
